Down Home Southern Cooking

One of our favorite recipes to enjoy in the summer is fried squash. I wish I had some home grown squash, but the squash from the store will have to work for now.

Sorry I didn't take a picture before I cut the squash up. I didn't think about blogging this until I was through with that part. Here are the ingredients. I don't have a specific recipe for the way I do this. This is the way us down south folks throw things together. I used 4 yellow squash and sliced them and placed them in a bowl. Then I mixed up an egg to do a wash on the squash. Then I mixed equal parts of cornmeal and flour in a bowl. Dip the squash slices in the egg and then throw them in the bowl with the cornmeal and flour and mix that all together until the squash is coated.

 This is what it looks like coated in the mixture.

Put enough oil in a pan to cover the squash. I used Crisco Canola oil and extra light olive oil together.
Get this oil good and hot.

Put a batch of squash in at a time that covers the bottom of the pan and cook and flip over till golden brown on both sides. Oh, I wish you could smell this.

Take the squash out and place on a dish with a paper towel for the grease to drain.

Continue cooking each batch and dump them on top of the rest, sprinkle with salt and enjoy!

Boy, it sure looks good! I can't hardly eat fried foods though. Acid reflux I've had for years and take meds for. I can only eat raw squash in a salad. Oh yum.

Yummy!!! I was just telling my kids I was going to make fried squash over the weekend, after I sauteed some in butter. We've got some squash and zuchini growing out back, but its not ready yet.
Yours looks so delicious and I bet it was! Love me some fried squash!

Yummy! We dont fry very often..but I love fried squash! I (sadly) recently I was diagnosed with Celiac Disease...One thing I had to give up FLOUR...:( I have gotten used to it and do use Gluten Free Flour on occasion...I need to try frying some squash with the GF flour...;)

I must be a southern girl in the Midwest! I grew up on this but we used flour instead of cornmeal. Maybe that is the Midwest version! I absolutely love it fried! Now you made me hungry so I might have to plan to make some next week!

Fried zucchini is one of my all time favorites. I could eat the whole batch myself. I have done it in the oven also and it works pretty well, but there is nothing like frying it!! Now you have made me hungry for fried zucchini!! Yumo, Kathysue

oh! it must be just that week of the year; we had a 'fry fest' this week. the squash was hands-down my favorite. my kids LOVE fried food but since i don't fry often, they get a nearly-reverent tone when i DO begin heating oil in a pan. . ."mom(deep inhale), are you--FRYING?"

I agree with Anita about the White Lily flour. Had a chuckle when I saw that. Just when I've been trying to be good and lay off fried foods! The fresh squash is in abundance at the grocery store right now and the price is not bad either. We had sauteed squash last night. Now I'm going to have to fry some!
